1.5 lbs (700g) boneless, skinless chicken thighs

4 medium-sized baby potatoes, halved

4 tablespoons unsalted butter

5 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper to taste

1 cup chicken broth

1 tablespoon fresh parsley, chopped (for garnish)

Juice of 1 lemon

Prepare the Chicken: Season the chicken thighs with salt, black pepper, smoked paprika, and dried thyme.

    Cook the Potatoes: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the halved baby potatoes and cook for about 10-12 minutes, turning occasionally, until they are golden and tender. Remove them from the skillet and set aside.

      Sear the Chicken: In the same skillet, melt the remaining butter. Add the seasoned chicken thighs and cook for 6-7 minutes on each side or until browned and cooked through. Ensure they reach an internal temperature of 165°F (75°C). Remove and set aside with the potatoes.
