Ingredients

1 lb beef steak (ribeye or sirloin), cut into bite-sized pieces

1 lb baby potatoes, halved or quartered

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally until they are golden brown and tender. Remove the potatoes from the skillet and set aside.

Sear the Steak: In the same skillet, increase the heat to medium-high. Add the steak pieces and season with salt and pepper. Sear the steak for about 3-4 minutes, allowing it to brown on all sides but remain tender inside. Remove the steak from the skillet and set aside.

Prepare Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic, rosemary, and thyme. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Combine All Ingredients: Return the steak and cooked potatoes to the skillet, tossing them in the garlic butter sauce, and cook for an additional 2-3 minutes until everything is heated through and well coated.

Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve immediately while hot.
