1 lb sirloin steak, cut into bite-sized chunks

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Preheat your oven to 400°F (200°C). Toss the halved baby potatoes in a bowl with olive oil, salt, and pepper until well coated. Spread the potatoes on a baking sheet in a single layer and roast for about 25-30 minutes, or until golden and tender, tossing halfway through.

    Cook the Steak Bites: While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter. Once melted, add the steak bites in a single layer (do this in batches if necessary to avoid overcrowding). Season with salt and pepper. Sear for about 2-3 minutes on each side for medium-rare or until desired doneness is achieved. Remove the steak from the pan and set aside.

      Prepare the Garlic Butter: In the same skillet, lower the heat to medium. Add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until the garlic is fragrant but not browned. Stir in the rosemary and thyme.

        Combine: Return the steak bites to the skillet, tossing them in the garlic butter sauce to coat. Cook for an additional 1-2 minutes to heat through.

          Serve: Transfer the roasted potatoes to a serving platter. Top with steak bites and drizzle the garlic butter from the skillet over both. Sprinkle with freshly chopped parsley for a burst of color and flavor.
