Ingredients

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Potatoes: Start by preheating your oven to 400°F (200°C). In a large mixing bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, pepper, and smoked paprika until evenly coated.

Roast the Potatoes: Spread the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through for even cooking.

Cook the Steak Bites: While the potatoes are roasting, heat 1 tablespoon of olive oil over medium-high heat in a large skillet. Season the steak bites with salt, pepper, and dried oregano.

Sear the Steak: Once the oil is hot, add the steak bites to the skillet in a single layer, avoiding overcrowding. Sear for about 2-3 minutes on each side until browned and cooked to your desired level of doneness. Remove the steak bites from the skillet and set aside.

Prepare the Garlic Butter: In the same skillet, lower the heat to medium and add the butter and minced garlic. Allow the garlic to cook gently for about 1-2 minutes, stirring frequently until fragrant and golden (but not burnt).

Combine and Serve: Return the steak bites to the skillet, tossing them in the garlic butter to coat well. Cook for an additional 1-2 minutes to reheat. Once done, remove from heat.

Serve It Up: Place the roasted potatoes onto a serving platter and top with the garlic butter steak bites. Garnish with fresh chopped parsley for a pop of color and added flavor.

Enjoy this hearty and aromatic dish that's perfect for a satisfying dinner!
