1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes or until golden and tender, stirring halfway through.

      Cook the Steak Bites: While the potatoes are roasting, season the steak cubes generously with salt and pepper. In a large skillet, heat 2 tablespoons of butter over medium-high heat. Once melted and sizzling, add the steak bites in a single layer (you may need to do this in batches). Sear for 2-3 minutes on each side until browned and cooked to your liking. Remove steak bites from the skillet and set aside.

        Make Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add remaining 2 tablespoons of butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in the rosemary and thyme, allowing the flavors to meld for another minute.

          Combine: Return the cooked steak bites to the skillet with the garlic butter, tossing to coat the meat in the sauce.
