Garlic Parmesan Pasta

12 oz spaghetti or fettuccine pasta

4 tablespoons olive oil

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup grated Parmesan cheese

1/2 cup heavy cream

Salt and black pepper, to taste

Zest of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Additional grated Parmesan, for serving

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until the garlic is fragrant and golden, being careful not to burn it.

      Add Cream and Cheese: Lower the heat and add the heavy cream to the skillet, stirring well to combine. Slowly add the grated Parmesan cheese, stirring continuously until melted and smooth.

        Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing it in the creamy sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Season with salt, black pepper, and lemon zest to taste.

          Serve: Remove from heat, garnish with fresh parsley, and serve immediately. Top with additional grated Parmesan if desired.
