Greek Feta Roast Potatoes

2 lbs (900g) baby potatoes, halved

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

200g (7 oz) feta cheese, crumbled

1 lemon, zested and juiced

Fresh parsley or dill, chopped (for garnish)

Optional: 1/2 teaspoon red pepper flakes (for a kick)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes, olive oil, oregano, garlic powder, smoked paprika, and season with salt and pepper. Toss until the potatoes are evenly coated with the oil and spices.

      Roast the Potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for about 30-35 minutes, or until they are golden and crispy on the outside, and tender on the inside. Make sure to stir them halfway through for even cooking.

        Add Feta: Once the potatoes are roasted, remove them from the oven and sprinkle the crumbled feta cheese over the hot potatoes. Return to the oven for an additional 5-7 minutes until the feta is slightly melted and golden.

          Finish with Lemon: Remove from the oven, and while still hot, drizzle the lemon juice and zest over the potatoes. Toss gently to combine.

            Garnish: Transfer to a serving dish and garnish with fresh parsley or dill. If you like a bit of heat, sprinkle with red pepper flakes.

              Serve: Serve hot as a delightful side dish or a vegetarian main.
