Grilled Tandoori Chicken

4 pieces of bone-in chicken thighs (skinless)

1 cup plain yogurt

2 tablespoons vegetable oil

2 tablespoons lemon juice

4 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons tandoori masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1 teaspoon smoked paprika

1 teaspoon garam masala

1 teaspoon salt (or to taste)

Fresh cilantro for garnish

Lemon wedges for serving

Prepare the Marinade: In a large mixing bowl, combine the yogurt, vegetable oil, lemon juice, minced garlic, and grated ginger. Mix well until smooth.

    Add the Spices: Stir in the tandoori masala, ground cumin, ground coriander, turmeric powder, smoked paprika, garam masala, and salt. Mix until all the spices are well combined.

      Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Refrigerate for at least 4 hours or preferably overnight for maximum flavor.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a charcoal grill, set it up for direct heat.

          Prepare the Chicken for Grilling: Remove the chicken from the marinade, shaking off any excess. Discard the leftover marinade to prevent contamination.

            Grill the Chicken: Place the chicken thighs on the grill, skin side down. Grill for about 5-7 minutes, covered, until nicely charred. Flip and grill for another 5-7 minutes on the other side, or until the internal temperature reaches 165°F (75°C) and the juices run clear.

              Rest and Serve: Remove from the grill and let the chicken rest for 5 minutes. Garnish with fresh cilantro and serve with lemon wedges on the side.
