Ground turkey is a lean protein that has gained popularity over the years as a healthier alternative to beef or pork. It’s known for its mild flavor, which allows it to absorb the spices and ingredients it’s cooked with, making it an ideal base for many recipes, especially tacos. One of the most significant advantages of ground turkey is its low-fat content. According to the USDA, a 3-ounce serving of ground turkey contains about 170 calories and only 8 grams of fat, compared to the 25 grams of fat typically found in ground beef. This makes it a heart-healthy option for those looking to reduce their fat intake while still enjoying flavorful meals.

Ingredients

1 lb ground turkey

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon chili powder

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (canned or fresh)

½ cup fresh cilantro, chopped

Juice of 1 lime

8 small corn or flour tortillas

Optional toppings: avocado slices, sour cream, shredded cheese, salsa

Instructions

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

Sauté Aromatics: Add the chopped onion and cook until translucent (about 3-5 minutes), then stir in the minced garlic and cook for another minute until fragrant.

Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

Add Veggies & Spices: Stir in the diced bell pepper, cumin, paprika, chili powder, salt, and pepper. Cook for an additional 3 minutes until the bell pepper softens.

Combine Ingredients: Add the black beans, corn, and diced tomatoes to the skillet. Stir everything together and simmer for 5-7 minutes, allowing the flavors to meld.

Finish with Cilantro & Lime: Remove from heat and stir in the fresh cilantro and lime juice.

Prepare Tortillas: Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Assemble Tacos: Spoon the turkey mixture onto each tortilla, add your desired toppings, and roll them up or serve open-faced.

Serve and Enjoy: Garnish with additional lime wedges and cilantro if desired.
