Ground Turkey Sweet Potato Casserole

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium yellow onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup diced tomatoes (fresh or canned)

1/2 cup chicken broth (or vegetable broth)

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

1/2 cup shredded cheese (cheddar or pepper jack)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Sweet Potatoes: In a medium pot, boil the diced sweet potatoes in salted water for about 8-10 minutes, or until tender. Drain and set aside.

      Sauté the Vegetables: In a large skillet, dice the onion and bell pepper. Heat a drizzle of olive oil over medium heat and add the onion, bell pepper, and garlic. Sauté for about 5 minutes until softened.

        Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, around 5-7 minutes.

          Combine Ingredients: Stir in the black beans, corn, diced tomatoes, chicken broth, and cooked sweet potatoes. Sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Mix everything together and let it simmer for about 5 minutes to meld the flavors.

            Transfer to Casserole Dish: Pour the turkey and vegetable mixture into a greased 9x13 casserole dish. Spread it evenly.

              Top with Cheese: Sprinkle the shredded cheese evenly over the top of the casserole.

                Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

                  Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro or parsley if desired. Serve warm and enjoy this hearty dish!
