1 lb ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 red bell pepper, diced

1 small yellow onion, diced

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp chili powder

Salt and black pepper to taste

2 tbsp olive oil

1 cup spinach (fresh or frozen)

Fresh cilantro or parsley, for garnish (optional)

Juice of 1 lime

Instructions
 

Prep the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally until tender and slightly caramelized. Remove and set aside.

    Cook Onion and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Add diced onion and red bell pepper, cooking for about 5 minutes until softened. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Brown the Ground Turkey: Push the vegetables to the side of the skillet and add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.

        Season and Combine: Stir in smoked paprika, cumin, chili powder, and adjust with salt and black pepper. Mix well to incorporate spices into the turkey.

          Add Sautéed Sweet Potatoes: Return the cooked sweet potatoes to the skillet, stirring everything together to meld the flavors.

            Add Spinach: Gently fold in the spinach and allow it to wilt for 1-2 minutes.

              Finish and Serve: Remove from heat and squeeze fresh lime juice over the skillet. Garnish with chopped cilantro or parsley if desired, and serve warm.
