Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup spinach, roughly chopped

1 tsp smoked paprika

1 tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with a pinch of salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until they are tender and starting to brown. Remove from the skillet and set aside.

    Cook the Ground Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant.

      Add Ground Turkey: Increase the heat to medium-high and add the ground turkey, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.

        Add Vegetables: Stir in the diced red bell pepper, cooked sweet potatoes, smoked paprika, cumin, and additional salt and pepper. Continue to cook for another 5 minutes until everything is heated through and the flavors meld together.

          Finish with Spinach: Add the chopped spinach to the skillet and stir until wilted, about 2 minutes.

            Serve: Garnish with fresh cilantro or parsley if desired. Serve warm, and enjoy your delicious, nutritious meal!
