Ingredients

2 lbs chicken thighs (bone-in, skin-on for more flavor)

1 cup soy sauce (preferably low sodium)

1/2 cup brown sugar

1/4 cup rice vinegar

1/4 cup water

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 teaspoon black pepper

1 teaspoon red chili flakes (optional for spice)

3 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked white rice (for serving)

Instructions

Prepare the Marinade: In a large bowl, whisk together the soy sauce, brown sugar, rice vinegar, water, minced garlic, grated ginger, sesame oil, black pepper, and red chili flakes (if using) until the sugar is dissolved.

Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, or preferably overnight for maximum flavor.

Preheat the Oven: Preheat your oven to 375°F (190°C).

Seer the Chicken: Remove the chicken from the marinade (reserve the marinade for later). In a large oven-safe skillet, heat a tablespoon of oil over medium-high heat. Sear the chicken thighs skin-side down for about 5-7 minutes until the skin is golden brown. Flip the chicken and sear for another 3-4 minutes.

Bake the Chicken: Pour the reserved marinade over the chicken in the skillet. Bring it to a simmer, then transfer the skillet to the preheated oven. Bake uncovered for about 30-35 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).

Garnish and Serve: Once cooked, remove the chicken from the oven. Let it rest for a few minutes before garnishing with sliced green onions and sesame seeds. Serve the Hawaiian Shoyu Chicken over cooked white rice and drizzle with extra sauce from the skillet.
