HONEY GARLIC ASIAN CHICKEN KABOBS

1 lb (450 g) boneless, skinless chicken thighs or breasts, cut into 1-inch cubes

1/4 cup honey

1/4 cup soy sauce (preferably low sodium)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch

1/2 teaspoon crushed red pepper flakes (optional, for a spicy kick)

1 bell pepper, cut into 1-inch pieces (any color)

1 medium red onion, cut into wedges

Green onions or sesame seeds, for garnish

Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, cornstarch, and crushed red pepper flakes (if using) until well combined.

    Marinate the Chicken: Place the chicken cubes in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for the best flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
