For the Chicken Marinade:

2 boneless, skinless chicken breasts

1/4 cup honey

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

For the Avocado Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

Salt to taste

For the Assembly:

1 small red onion, finely sliced

1/2 cup cherry tomatoes, halved

Fresh lime wedges for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together honey, lime juice, minced garlic, chili powder, salt, pepper, and olive oil.

      - Add chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.

        Cook the Rice:

          - Rinse jasmine rice under cold water until the water runs clear.

            - In a medium saucepan, bring chicken broth (or water) to a boil. Add rice and a pinch of salt.

              - Reduce heat to low, cover, and simmer for 15-18 minutes, or until rice is tender and liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.

                Prepare Avocado Rice:

                  - In a large bowl, fluff the cooked rice with a fork. Gently fold in diced avocado, cilantro, lime juice, and additional salt to taste.

                    Cook the Chicken:

                      - Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade, allowing excess to drip off.

                        - Grill chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Let the chicken rest for a few minutes before slicing.

                          Assemble the Stack:
