1 cup apple cider

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray and set aside.

    In a small saucepan, bring the apple cider to a boil over medium heat. Reduce heat to a simmer and let it cook until reduced to 1/2 cup, about 10-15 minutes. Set aside to cool.

      In a large mixing bowl, whisk together the sugars, melted butter, egg, vanilla extract, and the cooled apple cider until well combined.

        In another bowl, mix the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt together.

          Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix, as this can make the donuts dense.

            Using a piping bag or a zip-top bag with the corner cut off, fill each donut cavity in the pan about 2/3 full with batter.

              Bake in the preheated oven for 10-12 minutes, or until the donuts are lightly golden and a toothpick inserted comes out clean. Let them cool in the pan for 5 minutes before transferring them to a wire rack.

                In a small bowl, mix the sugar and cinnamon together for the coating. While the donuts are still warm, roll each donut in the cinnamon-sugar mixture until well-coated.
