2 cups rolled oats

2 cups unsweetened almond milk (or milk of choice)

2 medium apples, peeled, cored, and diced

1/4 cup pure maple syrup (or honey)

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper.

    In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, applesauce, vanilla extract, cinnamon, nutmeg, baking powder, and salt. Stir until well combined.

      Fold in the diced apples, nuts, and dried fruits if using. Mix gently so the apples are evenly distributed.
