Ingredients

1 cup rolled oats

1 cup almond milk (or any milk of choice)

1 ripe peach, diced (reserve some slices for topping)

1 tablespoon chia seeds

1 tablespoon honey or maple syrup (optional)

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

1/4 cup Greek yogurt (optional for creaminess)

Fresh mint leaves for garnish (optional)

Instructions

In a medium bowl or a mason jar, combine the rolled oats, almond milk, diced peach, chia seeds, honey (if using), vanilla extract, cinnamon, and salt. Stir well until all ingredients are thoroughly mixed.

If you want an extra creamy texture, fold in the Greek yogurt at this stage.

Divide the mixture evenly into serving jars or containers. Cover with lids or plastic wrap.

Refrigerate the oats overnight (or for at least 4 hours) to allow the oats and chia seeds to absorb the liquid and soften.

In the morning, give the oats a good stir and top with additional peach slices. You can also add a sprinkle of cinnamon, a drizzle of honey or maple syrup, and a few mint leaves for a refreshing touch.

Serve chilled and enjoy a delicious, nutritious breakfast that will keep you satisfied all morning!
