2 cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted and slightly cooled

1 large egg

1 teaspoon vanilla extract

1/2 cup sour cream

1 1/2 cups peeled and diced apples (about 2 medium apples)

1/2 cup chopped walnuts or pecans (optional)

2 tablespoons brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, baking powder, ground cinnamon, and salt until well combined.

      In a separate bowl, mix the melted butter, egg, vanilla extract, and sour cream until smooth.

        Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

          Fold in the diced apples and walnuts or pecans (if using) until evenly distributed throughout the batter.

            Divide the batter evenly among the muffin cups, filling each cup about two-thirds full.

              In a small bowl, combine the brown sugar and ground cinnamon for the topping. Sprinkle this mixture generously over the batter in each muffin cup.

                Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Remove from the oven and let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
