1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or milk + 1 tablespoon vinegar)

2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup granulated sugar mixed with 1 teaspoon cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

        Add Eggs and Vanilla: Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

          Combine Wet and Dry Ingredients: Gradually mix in the flour mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture. Stir until just combined (do not overmix!).

            Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts, if using.
