4 large eggs

2 tablespoons mayonnaise (preferably Japanese style)

1 teaspoon Dijon mustard

Salt and pepper, to taste

4 slices of soft white bread (shokupan or similar)

1 teaspoon soy sauce (optional)

Fresh chives or scallions, finely chopped (for garnish)

Butter (for optional toasting)

Instructions
 

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the pan, remove it from heat, and let it sit for 10-12 minutes.

    Prepare the Filling: After the eggs have boiled, transfer them to an ice bath to cool for about 5 minutes. Once cooled, peel the eggs and chop them into small pieces.

      Mix the Ingredients: In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, a dash of salt, pepper, and soy sauce (if using). Gently mix until creamy and well combined. Adjust seasoning to taste.

        Assemble the Sandwich: Take two slices of white bread and spread a generous amount of the egg mixture evenly on one slice. Place the second slice on top to create a sandwich. Repeat with the remaining bread and egg mixture.

          Optional Toasting: If desired, spread a thin layer of butter on the outside of the sandwiches. In a skillet over medium heat, toast the sandwiches until golden brown and crisp on both sides, about 2-3 minutes per side.
