Ingredients
  

1 pound large shrimp, peeled and deveined

1/4 cup fresh lime juice (about 2 limes)

1/4 cup orange juice

1/4 cup tequila (optional)

3 tablespoons olive oil

2 tablespoons agave syrup or honey

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a medium-sized bowl, combine lime juice, orange juice, tequila (if using), olive oil, agave syrup, minced garlic, chili powder, cumin, salt, and black pepper. Whisk until well-blended.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Gently toss to coat the shrimp evenly. Cover the bowl and refrigerate for at least 30 minutes, but no longer than 2 hours to avoid the shrimp becoming tough.

      Prepare the Vegetables: While the shrimp is marinating, chop the red and green bell peppers and red onion into evenly sized pieces (about 1 inch).

        Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). If using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent burning.

          Assemble the Kabobs: Thread the marinated shrimp and vegetable pieces onto the skewers, alternating between shrimp and veggies for a colorful presentation. Leave a little space between each piece for even cooking.

            Grill the Kabobs: Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and have nice grill marks. Be careful not to overcook, as shrimp can become rubbery.

              Serve: Remove the kabobs from the grill and let them rest for a minute. Garnish with fresh cilantro and serve with lime wedges on the side for an extra zesty kick.
