Ingredients

1 pound ground beef (preferably 80/20 for flavor)

2 tablespoons soy sauce

1 tablespoon sesame oil

2 tablespoons brown sugar

3 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon rice vinegar

1 teaspoon gochugaru (Korean red pepper flakes) or to taste

1 small carrot, finely diced

1 cup broccoli florets (can substitute with snap peas)

2 green onions, sliced (white and green parts separated)

2 cups cooked jasmine rice (or short-grain rice)

Sesame seeds for garnish

Optional: kimchi for serving

Instructions

Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart as it cooks (about 5-7 minutes). Drain excess fat if necessary.

Add Aromatics: Stir in the minced garlic, grated ginger, and the white parts of the green onions. Cook for an additional 2 minutes until fragrant.

Flavor the Beef: Add the soy sauce, sesame oil, brown sugar, rice vinegar, and gochugaru to the skillet. Mix well and let it simmer for 3-5 minutes, allowing the flavors to meld.

Incorporate Vegetables: Toss in the diced carrots and broccoli florets. Stir until the vegetables are tender-crisp and heated through (about 3-4 minutes).

Serve: Assemble by placing a generous portion of cooked rice in each bowl. Top with the flavorful Korean ground beef mixture. Garnish with green onion greens and sesame seeds.

Optional Additions: Serve with a side of kimchi for an authentic Korean touch and extra flavor!
