8 oz whole grain pasta (e.g., rotini or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper (any color), diced

1/4 red onion, finely chopped

1 cup fresh basil leaves, roughly torn

1/4 cup pine nuts, toasted (or sunflower seeds for nut-free option)

1/4 cup extra-virgin olive oil

Juice of 1 large lemon

Zest of 1 lemon

1 tsp garlic powder

Salt and pepper to taste

Optional: nutritional yeast for a cheesy flavor

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
