8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 cups fresh spinach

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1/4 cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
