6 large eggs

1 cup egg whites (about 8 egg whites)

1 cup cooked lean turkey sausage, crumbled

1 cup black beans, rinsed and drained

1 bell pepper (red, green, or yellow), diced

1 small onion, diced

1 cup spinach, chopped

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

4 whole wheat tortillas (large)

1 cup low-fat shredded cheese (cheddar or Mexican blend)

Salsa or hot sauce, for serving (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Veggies: In a large skillet over medium heat, add a splash of water or a bit of cooking spray. Sauté the diced onion and bell pepper for about 5 minutes, until they are softened. Add the chopped spinach and continue to cook until it’s wilted. Season with salt, pepper, cumin, and smoked paprika.

      Combine Ingredients: In a large mixing bowl, whisk together the whole eggs and egg whites. Add in the crumbled turkey sausage, black beans, and the sautéed vegetable mixture. Stir until well combined.

        Sheet Pan Setup: Line a rimmed baking sheet with parchment paper or lightly grease it. Pour the egg mixture onto the sheet pan, spreading it evenly.

          Bake the Filling: Bake in the preheated oven for 15-20 minutes, or until the egg mixture is fully set and slightly golden on top.
