1.5 lbs flank steak or sirloin steak

3 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

1 tablespoon apple cider vinegar

4 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons smoked paprika

1 teaspoon chili powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon chipotle powder (for added heat, optional)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Marinate the Steak: In a bowl, whisk together the olive oil, lime juice, apple cider vinegar, minced garlic, cumin, smoked paprika, chili powder, oregano, salt, black pepper, and chipotle powder (if using). Place the steak in a resealable plastic bag or a shallow dish and pour the marinade over it. Seal the bag or cover the dish, then refrigerate for at least 1 hour (up to 24 hours for more flavor).

    Prepare the Grill or Skillet: Preheat a grill or cast-iron skillet over medium-high heat. If using a skillet, you can add a little more olive oil to prevent sticking.

      Cook the Steak: Remove the steak from the marinade, letting any excess marinade drip off. Place on the grill or skillet and cook for about 4-6 minutes on each side for medium-rare, depending on the thickness of the steak. Use a meat thermometer to check for 130°F (54°C) for medium-rare or 140°F (60°C) for medium.
