2 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup chicken broth

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese

8 ounces fettuccine pasta

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and black pepper on both sides.

    Cook the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add in the cherry tomatoes and cook for another 3-4 minutes until they start to soften.

        Add Liquids: Pour in the heavy cream and chicken broth, then stir in the Italian seasoning and red pepper flakes (if using). Bring the mixture to a gentle simmer.

          Incorporate Cheese: Stir in the Parmesan cheese until fully melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.

            Cook the Pasta: In a separate pot, boil water and cook the fettuccine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.

              Combine Everything: Slice the cooked chicken into strips and add it back to the skillet with the sauce. Add the drained fettuccine pasta and toss everything together. If the sauce is too thick, add the reserved pasta water a little at a time until desired consistency is reached.

                Serve: Plate the pasta, garnish with fresh basil leaves and sprinkle additional Parmesan cheese on top. Serve immediately.
