Ingredients

2 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon olive oil

1 cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup grated Parmesan cheese

1/2 cup fresh basil, chopped

8 ounces fettuccine pasta

Fresh basil leaves for garnish

Instructions

Prepare the Pasta: Cook the fettuccine according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving 1/2 cup of the pasta water.

Season and Cook Chicken: Season the chicken breasts with salt, pepper, and garlic powder. In a large skillet over medium-high heat, add olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes per side, or until cooked through and golden brown. Remove from skillet and let rest before slicing.

Create the Sauce: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for about 2 minutes until fragrant. Then, pour in the heavy cream and chicken broth. Stir in red pepper flakes, and bring to a gentle simmer.

Add Cheese and Basil: Stir in the grated Parmesan cheese until melted and creamy, followed by the chopped fresh basil.

Combine Pasta and Sauce: Add the cooked fettuccine to the sauce, tossing gently to coat. If the sauce is too thick, incorporate some reserved pasta water until desired consistency is reached.

Finish with Chicken: Slice the cooked chicken and place it on top of the pasta. Allow it to warm through for a minute.

Garnish and Serve: Serve immediately, garnished with additional fresh basil leaves and extra Parmesan cheese if desired.
