Mediterranean Chicken Pasta Salad

2 cups rotini or fusilli pasta

1 pound boneless, skinless chicken breast, grilled and sliced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a kick

Cook the Pasta: In a large pot of salted boiling water, add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Chicken: If not pre-cooked, grill the chicken breasts over medium heat for about 6-7 minutes on each side, or until fully cooked. Once cooked, let them rest for a few minutes before slicing into strips.

      Mix the Vegetables: In a large bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley, giving them a gentle toss.

        Combine Ingredients: Add the cooled pasta and sliced chicken to the vegetable mixture.
