4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground cinnamon

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon ground ginger

Salt and pepper to taste

1/2 cup chicken broth

1 can (15 oz) chickpeas, drained and rinsed

1 cup dried apricots, chopped

1 tablespoon honey

1/4 cup fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine the cumin, coriander, cinnamon, smoked paprika, cayenne, ginger, salt, and pepper. Add olive oil and mix well. Coat the chicken breasts in this spice mix and let them marinate for at least 30 minutes (or up to 4 hours in the refrigerator for maximum flavor).

    Sear the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken breasts and sear for about 4-5 minutes on each side or until they are golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Aromatics: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add minced garlic and cook for another minute until fragrant.

        Build the Flavor Base: Return the chicken to the skillet. Pour in the chicken broth, and add the chickpeas, chopped dried apricots, and honey. Stir to combine, making sure the chicken is well coated with the mixture.
