No Bake Pineapple Cream Dessert

Ingredients
  

1 can (20 oz) crushed pineapple, drained

1 cup heavy whipping cream

1 cup cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 package (8 oz) vanilla pudding mix

1 cup cold milk

1 cup shredded coconut (optional)

1 cup crushed graham crackers

1/2 cup unsalted butter, melted

Maraschino cherries and pineapple slices for garnish

Instructions
 

In a medium bowl, combine the crushed graham crackers with melted butter. Mix until well combined and then press the mixture firmly into the bottom of a 9x13 inch dish to create the crust. Set aside.

    In a separate large bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until fully combined.

      In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.

        In another small bowl, whisk together the vanilla pudding mix and cold milk until it starts to thicken. Once thickened, gently fold this into the cream cheese and whipped cream mixture.

          Fold in the drained crushed pineapple and shredded coconut (if using) until evenly distributed throughout the mixture.

            Pour the pineapple cream filling over the graham cracker crust in the prepared dish. Spread it evenly and smooth the top with a spatula.

              Cover the dessert with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or preferably overnight, to allow it to set properly.

                Before serving, garnish with maraschino cherries and pineapple slices for a festive look. Cut into squares and enjoy!
