Ingredients
  

4 boneless, skinless chicken thighs

1 cup long-grain white rice

2 cups chicken broth

1/2 cup honey

1/2 cup BBQ sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup mixed bell peppers, diced

1/2 cup frozen peas

2 green onions, sliced (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, garlic powder, onion powder, and smoked paprika. Make sure the thighs are evenly coated.

    Sear the Chicken: In a large skillet or frying pan, heat the olive oil over medium-high heat. Add the seasoned chicken thighs to the pan and sear for about 4-5 minutes on each side until golden brown. Remove the chicken from the pan and set aside.

      Cook the Rice: In the same pan, add the rice and toast it for about 1-2 minutes until it becomes slightly transparent. Stir frequently to prevent burning.

        Add Liquid and Chicken: Pour in the chicken broth, honey, and BBQ sauce. Stir well to combine. Place the seared chicken thighs back into the pan, nestling them into the rice.

          Add Vegetables: Sprinkle the diced bell peppers and frozen peas over the top of the chicken and rice mixture.

            Simmer: Bring everything to a gentle simmer over medium heat, then cover the skillet with a lid. Reduce heat to low and cook for about 20-25 minutes, or until the rice is tender and has absorbed the liquid.

              Check and Serve: Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice gently with a fork, mixing the chicken and vegetables into the rice. Garnish with sliced green onions before serving.
