2 medium onions, thinly sliced

3 cloves garlic, minced

4 cups low-sodium beef or vegetable broth

1 tablespoon olive oil

1 tablespoon unsalted butter

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon balsamic vinegar

1 cup grated Gruyère cheese

¼ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish

Sauté the Onions: In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the sliced onions, sprinkle with a pinch of salt, and cook, stirring frequently, until they are golden brown and caramelized, about 15-20 minutes.

    Add Garlic & Seasoning: Stir in the minced garlic and fresh thyme. Cook for another minute until fragrant.
