1 lb (450g) boneless, skinless chicken breasts, cubed

1 tbsp olive oil

2 cups (480ml) chicken broth

1 cup (240ml) heavy cream

1 lb (450g) potato gnocchi

2 cups fresh spinach

Zest and juice of 1 large lemon

3 cloves garlic, minced

1 tsp Italian seasoning

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped, for garnish

Sear the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed chicken breasts, season with salt and pepper, and sauté until browned on all sides (about 5-7 minutes). Remove the chicken from the pot and set aside.

    Sauté Aromatics: In the same pot, add the minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Build the Base: Pour in the chicken broth and bring to a simmer. Scrape any browned bits off the bottom of the pot for added flavor.

        Add Gnocchi and Cream: Stir in the heavy cream, lemon zest, and lemon juice, then add the gnocchi. Cook according to the package instructions, typically about 2-3 minutes until the gnocchi float to the top.

          Combine Everything: Once the gnocchi is cooked, return the sautéed chicken to the pot, and gently fold in the fresh spinach. Cook for an additional 2 minutes or until the spinach is wilted.
