One Skillet Salmon with Lemon Orzo

Ingredients
  

2 salmon fillets (6 oz each)

1 cup orzo pasta

2 cups vegetable broth

1 lemon (zest and juice)

3 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season salmon fillets with salt, pepper, and half of the lemon zest. Place the salmon skin-side down in the hot skillet. Cook for about 4-5 minutes until crispy, then carefully flip and cook for another 3-4 minutes, until the salmon is cooked through. Remove and set aside.

    In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant. Add the orzo pasta, stirring to coat in the oil and garlic for about 1-2 minutes.

      Pour the vegetable broth and half of the lemon juice into the skillet. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.

        Once the orzo is cooked, stir in the cherry tomatoes, spinach, dried oregano, and the remaining lemon zest and juice. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are tender.

          Nestle the cooked salmon back into the skillet with the orzo. Spoon some of the orzo mixture over the salmon and cook for another minute to reheat the fish.

            Remove from heat, garnish with freshly chopped parsley, and serve warm, drizzled with additional olive oil if desired.
