Peruvian Grilled Chicken with Creamy Green Sauce

For the Chicken Marinade:

4 boneless, skinless chicken thighs

4 cloves garlic, minced

1 tablespoon cumin

1 tablespoon paprika

1 teaspoon dried oregano

Juice of 2 limes

Salt and black pepper to taste

2 tablespoons olive oil

For the Creamy Green Sauce:

1 cup fresh cilantro leaves, packed

1 jalapeño pepper, seeds removed (adjust for spice level)

1/2 cup mayonnaise

1/2 cup Greek yogurt

Juice of 1 lime

1 clove garlic

Salt to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine minced garlic, cumin, paprika, oregano, lime juice, salt, pepper, and olive oil.

      - Add the chicken thighs and toss to coat. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

        Prepare the Creamy Green Sauce:

          - In a food processor, combine the cilantro, jalapeño, mayonnaise, Greek yogurt, lime juice, garlic, and a pinch of salt.

            - Blend until smooth and creamy. Taste and adjust the salt or lime juice as needed. Set aside or refrigerate until ready to serve.

              Grill the Chicken:

                - Preheat your grill to medium-high heat.

                  - Remove the chicken from the marinade and let excess marinade drip off.

                    - Grill the chicken for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the exterior is nicely charred.

                      Serve:

                        - Remove chicken from the grill and let it rest for 5 minutes before slicing.

                          - Serve slices of grilled chicken drizzled with the creamy green sauce, and garnish with additional cilantro if desired.
