Ingredients
  

8 oz pasta of your choice (spaghetti, penne, or fusilli)

2 chicken breasts, boneless and skinless

1 cup fresh basil leaves

1/3 cup pine nuts (toasted)

2 cloves garlic

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

Salt and pepper to taste

Juice of 1 lemon

Cherry tomatoes, halved (for garnish)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Pesto:

    - In a food processor, combine the basil leaves, toasted pine nuts, garlic, and Parmesan cheese. Pulse until coarsely chopped.

      - Slowly drizzle in the olive oil while blending until smooth. Season with salt, pepper, and lemon juice to taste. Set aside.

        Cook the Pasta:

          - Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and return it to the pot.

            Grill the Chicken:

              - Preheat a grill pan or outdoor grill over medium-high heat. Season the chicken breasts with salt and pepper (and a drizzle of olive oil if desired) on both sides.

                - Grill the chicken for about 6-7 minutes per side or until cooked through and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes before slicing.

                  Combine:

                    - Add the pesto to the cooked pasta in the pot, tossing to coat evenly. If the pesto is too thick, add a splash of the reserved pasta water until you reach your desired consistency.

                      Serve:

                        - Plate the pasta and top with sliced grilled chicken.

                          - Garnish with cherry tomatoes and fresh basil leaves for a burst of color and flavor.
