Quick & Easy Homemade Butter Chicken

Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust to taste)

2 tablespoons vegetable oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 tablespoon ginger, minced

1 can (400g) crushed tomatoes

1 cup heavy cream

2 tablespoons butter

Salt to taste

Fresh cilantro, chopped (for garnish)

Cooked basmati rice or naan (for serving)

Instructions
 

In a mixing bowl, combine yogurt, lemon juice, garam masala, turmeric, chili powder, and salt. Add chicken pieces and marinate for at least 30 minutes (or overnight for best results).

    Heat the vegetable oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown, about 5-7 minutes.

      Stir in the garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

        Add the crushed tomatoes to the pan and cook for about 5 minutes until they begin to break down.

          Add the marinated chicken, along with any leftover marinade, into the pan. Cook for 10-12 minutes, stirring occasionally until chicken is cooked through.

            Lower the heat and stir in the heavy cream and butter. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.

              Taste and adjust the salt and spices as desired.

                Serve hot, garnished with fresh cilantro, alongside basmati rice or warm naan.
