Ingredients
  

1 cup watermelon, cubed

1/2 cup coconut milk (or almond milk)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust to taste)

A pinch of salt

Fresh mint leaves for garnish

Optional toppings: sliced almonds, toasted coconut flakes, or extra watermelon cubes
