Salmon Crispy Rice

Ingredients
  

1 cup sushi rice

1 1/4 cups water

1 1/2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 tablespoon vegetable oil (for frying)

1 pound fresh salmon fillet, skin removed

Salt and pepper to taste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 avocado, sliced

2 green onions, thinly sliced

1 tablespoon black sesame seeds (optional)

Pickled ginger (for garnish)

Wasabi (for garnish)

Instructions
 

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Drizzle this mixture over the warm rice and gently fold it in with a spatula. Allow the rice to cool to room temperature.

      Prepare the Salmon: Season the salmon fillet with salt, pepper, soy sauce, and sesame oil. Heat the vegetable oil in a non-stick skillet over medium-high heat. Sear the salmon for about 3-4 minutes on each side until cooked through and slightly crispy. Remove from the pan and allow to rest for a few minutes before slicing it into bite-sized pieces.

        Fry the Rice: In the same skillet, press the cooled sushi rice into the bottom of the pan to form a compact layer. Cook over medium heat for about 5-7 minutes until the bottom is crispy and golden brown. Carefully flip the rice over in sections to crisp the other side (you can cut it into squares to make this easier). Cook for an additional 5-7 minutes.

          Assemble the Dish: Cut the crispy rice into squares and place them on a serving platter. Top each rice square with a piece of the cooked salmon, a slice of avocado, and a sprinkle of green onions and black sesame seeds.
