1 lb boneless, skinless chicken thighs

1 ripe pineapple, peeled, cored, and chopped into chunks

1 can (14 oz) black beans, drained and rinsed

1 red bell pepper, sliced

1 red onion, sliced

2 tablespoons olive oil

1 tablespoon chipotle powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

8 small corn tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Chicken: In a medium bowl, combine olive oil, chipotle powder, smoked paprika, garlic powder, cumin, salt, and pepper. Add the chicken thighs and toss to coat. Let it marinate for about 15 minutes.
