Ingredients
  

1 lb (450g) smoked sausage, sliced into rounds

2 cups broccoli florets

1 cup bell peppers (mixed colors), sliced

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the sliced sausage, broccoli, bell peppers, zucchini, and cherry tomatoes.

      Drizzle the olive oil over the mixture, then add garlic powder, Italian herbs, salt, and pepper. Toss everything together until the veggies and sausage are well-coated.

        Spread the mixture evenly on a large sheet pan, making sure not to overcrowd the pan.

          Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sausage is browned and the veggies are tender.

            Remove from the oven and let cool slightly.
