Layered with quinoa or rice, mixed greens, and creamy avocado, each bowl is topped with a zesty lime-chili sauce that ties it all together. For the Shrimp:

1 pound (450g) large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, seeded and finely chopped (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt

1 tablespoon mayonnaise

Juice of 1 lime

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

For the Bowls:

2 cups cooked quinoa or rice (your choice)

1 avocado, sliced

Mixed greens (e.g., spinach or arugula)

Lime wedges for garnish

Instructions
 

Prepare the Shrimp: In a bowl, combine olive oil, minced garlic, paprika, cumin, salt, pepper, and lime juice. Add the shrimp and coat well. Let marinate for about 15-20 minutes.

    Make the Mango Salsa: In a medium bowl, mix together the diced mango, red onion, red bell pepper, jalapeño (if using), cilantro, lime juice, and salt. Set aside to let the flavors meld.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, chili powder, garlic powder, and salt and pepper. Adjust the seasoning to taste.

        Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

          Assemble the Bowls: In serving bowls, layer a base of cooked quinoa or rice, followed by a handful of mixed greens. Top with cooked shrimp, sliced avocado, and a generous scoop of mango salsa.

            Drizzle and Serve: Drizzle each bowl with the lime-chili sauce and serve with lime wedges on the side.
