Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp Bowls:

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (optional)

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt or sour cream

Juice of 1 lime

1 teaspoon chili powder

1 teaspoon honey or agave syrup

Salt and pepper to taste

Instructions
 

Prepare the Shrimp:

    - In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Add the shrimp and toss until evenly coated.

      - Heat a non-stick skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and set aside.

        Make the Mango Salsa:

          - In a separate bowl, combine diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, and salt. Toss gently to combine and set aside to let the flavors meld.

            Prepare the Lime-Chili Sauce:

              - In a small bowl, mix together Greek yogurt (or sour cream), lime juice, chili powder, honey, salt, and pepper. Adjust seasoning to taste.
