Instructions

Prepare the Shrimp:

In a bowl, combine the olive oil, minced garlic, smoked paprika, cayenne pepper, lime juice, salt, and black pepper. Add the shrimp to the marinade and toss to coat. Let it marinate for about 15-20 minutes.

      Make the Mango Salsa:

In a separate bowl, mix together the diced mango, red onion, jalapeño, lime juice, and a pinch of salt. Stir gently and set aside to let the flavors meld.

          Cook the Shrimp:

Heat a non-stick pan over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.

              Prepare the Lime-Chili Sauce:

In a small bowl, whisk together the Greek yogurt (or sour cream), lime zest, lime juice, honey (or agave syrup), chili powder, and salt until smooth.

                  Assemble the Bowls:

In serving bowls, layer the cooked quinoa or brown rice as the base. Top with black beans, the sautéed shrimp, diced avocados, corn, and diced red bell pepper. Spoon the fresh mango salsa generously over each bowl.

                      Drizzle the Sauce:

Finish with a drizzle of lime-chili sauce over each bowl. Garnish with fresh cilantro leaves for an extra burst of flavor.

                          Serve and Enjoy:

Serve immediately while everything is fresh and vibrant. Enjoy your delicious and healthy Shrimp and Avocado Bowls with Mango Salsa and Lime-Chili Sauce!
