Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 large onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

Salt and pepper to taste

Cooked rice or noodles (for serving)

Chopped green onions (for garnish)

Instructions

Marinate the Steak: In a bowl, combine the thinly sliced flank steak, soy sauce, and cornstarch. Toss to coat the meat evenly. Let it marinate for at least 15 minutes while you prepare the vegetables.

Prepare the Vegetables: Slice the onion and bell peppers. Mince the garlic and ginger. Set everything aside.

Heat the Pan: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

Cook the Steak: Add the marinated steak to the hot pan in a single layer. Cook without stirring for about 2 minutes until it’s seared on one side. Flip the slices and sauté for another 1-2 minutes until browned but not cooked through. Remove the steak from the pan and set it aside.

Sauté the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil if needed. Sauté the onion for about 2 minutes until it starts to become translucent. Add the bell peppers, garlic, and ginger, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Combine Ingredients: Return the steak to the pan with the vegetables. Add the oyster sauce, sesame oil, and rice vinegar. Stir quickly to combine and cook for an additional 2-3 minutes until the steak is cooked through and everything is well coated. Season with salt and pepper to taste.

Serve: Serve the sizzling pepper steak over cooked rice or noodles. Garnish with chopped green onions.
