Skillet Banana Fritters

Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1 large egg

1/2 cup buttermilk (or milk with 1 tsp vinegar)

1 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

Vegetable oil or butter for frying

Powdered sugar and sliced bananas for serving (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, granulated sugar, egg, buttermilk, and vanilla extract. Mix well until fully combined.

    In another bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.

      Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to over-mix; it's okay if there are a few lumps. If desired, fold in the mini chocolate chips.

        Heat a skillet over medium heat and add a thin layer of vegetable oil or butter, ensuring the surface is well-coated.

          Once the skillet is hot, drop spoonfuls (about 2 tablespoons each) of the fritter batter onto the skillet, leaving enough space between them to spread slightly.

            Cook for 2-3 minutes on one side, or until small bubbles appear on the surface and the edges look set. Flip the fritters and cook for an additional 2-3 minutes, until golden brown and cooked through.

              Remove from the skillet and repeat the process with the remaining batter, adding more oil or butter as necessary.

                Serve the fritters warm, dusted with powdered sugar and topped with additional sliced bananas, if desired.
