8 oz. of spaghetti or your preferred noodles

4 tablespoons of vegetable oil

6 cloves of garlic, minced

2-3 red chilies, finely sliced (adjust to taste)

2 tablespoons of soy sauce

1 tablespoon of oyster sauce (optional for depth)

1 tablespoon of rice vinegar

1 tablespoon of Sriracha or chili paste (adjust to taste)

1 teaspoon of sesame oil

1/4 cup of green onions, chopped

1/4 cup of fresh cilantro, chopped

Sesame seeds for garnish

Cook the Noodles: Start by boiling water in a large pot. Add the noodles and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Heat the Oil: In a large skillet or wok, heat vegetable oil over medium-high heat.

      Sauté Garlic and Chilies: Add minced garlic and red chilies to the skillet, sautéing for about 1-2 minutes until aromatic but not browned.

        Add Sauces: Pour in the soy sauce, oyster sauce (if using), rice vinegar, and Sriracha or chili paste. Stir well to combine.

          Combine Noodles: Add the cooked noodles to the skillet. Toss them in the sauce, adding reserved pasta water a little at a time to achieve the desired consistency (you may not need the entire cup).

            Finish with Oils and Herbs: Drizzle in sesame oil and toss again. Then, fold in chopped green onions and cilantro, mixing thoroughly.

              Serve: Plate the spicy garlic noodles, garnishing with sesame seeds and additional cilantro or green onions if desired.
