1.5 lbs boneless, skinless chicken thighs

3 tablespoons olive oil

3 jalapenos, finely chopped (adjust for heat preference)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (optional for extra heat)

2 tablespoons lime juice

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prepare the Marinade: In a large bowl, combine olive oil, chopped jalapenos, minced garlic, smoked paprika, cumin, cayenne pepper (if using), lime juice, salt, and pepper. Mix well.

    Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Preheat the Grill or Skillet: If grilling, preheat your grill to medium-high heat. If using a skillet, heat it over medium heat and add a small drizzle of olive oil.

        Cook the Chicken: Remove chicken from the marinade (discard any remaining marinade). Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). If using a skillet, cook for the same duration, ensuring a nice sear.

          Rest and Slice: Once cooked, remove the chicken from the heat and let it rest for 5 minutes. Slice the chicken into strips.
